Hello dear readers! As promised, here is the gyoza recipe I mentioned a couple of months ago on my Instagram. I’m thrilled to finally share this delicious recipe with all of you. Gyoza is a delightful dish that never fails to impress, and I can’t wait for you to try it out. So without further ado, let’s dive into the wonderful world of homemade gyoza!

Ingredients (for about 20 Gyozas)

For the Dough:
– 200g all-purpose flour
– a pinch of salt
– 10 ml (about 1/2 cup) water

For the Filling:
– 1 small zucchini, finely grated
– 100g mushrooms, finely chopped
– 1 tablespoon fresh ginger, minced
– 1 small onion, finely diced
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 tablespoon vegetable oil for cooking
– salt and pepper to taste

Instructions

Prepare the Dough:
1. In a mixing bowl, combine 200g of all-purpose flour and a pinch of salt.
2. Gradually pour in about 10ml of water while stirring the flour mixture.
3. Knead the dough on a floured surface until it becomes cohesive and smooth.
4. Cover the dough with a damp cloth and let it rest at room temperature for approximately 20 minutes.

Prepare the Filling:
1. In a pan, heat 1 tablespoon of vegetable oil. Add the diced onion and minced ginger, sautéing until fragrant.
2. Add the finely chopped mushrooms to the pan and cook until they release their moisture and become tender.
3. Stir in the grated zucchini and continue cooking until the some of the liquid evaporates.
4. Season the filling with salt, pepper, soy sauce, and sesame oil. Cook for an additional 2-3 minutes.
5. Remove from heat and let the filling cool.

Assemble the Gyoza:
1. Roll out the rested dough on a floured surface and cut out circles using a round cookie cutter or a glass.
2. Place a small spoonful of the vegetable filling in the center of each dough circle.
3. Moisten the edges of the dough with water and fold it in half, pinching the edges to seal the dumpling.
Extra: look up pictures or tutorials on the folding techniques in advance and try them out ^^

Cook the Gyoza:
1. Heat a non-stick pan over medium-high heat and add a small amount of oil.
2. Place the dumplings in the skillet, ensuring they are not touching each other.
3. Cook until the bottoms are golden brown.
4. Pour water into the skillet, cover with a lid, and steam the dumplings for a few minutes.

Serve and Enjoy! I like to serve the gyozas with some chili oil and soy sauce and a side of cucumber salad.
